Little Cloud Coffee lives as an annex within visvim store in Omotesando, built around the concept of a café to be enjoyed everyday. Visvim Original Roast Coffee is developed starting from the careful selection of beans, degree of roast, and choice blending. Drip coffee, espresso, and seasonal beverages and refreshments are offered on the menu.
Two types of beans originating from Guatemala, roasted to varying degrees, and one type of beans originating from El Salvador. visvim original roast coffee is a blend of these three Central American coffee beans.
The full-bodied flavor, sweet aroma, and subtle hints of fruit are all characteristic of the highest grade coffee beans. This is a balanced middle bitter roast, right between a City roast and a Full City roast, and is filled with the distinctive character of hard beans cultivated in volcanic ash soil.
Made as an espresso, this coffee yields a condensed extract with striking acidity and an extremely rich flavor, both of which become even more pronounced when mixed with milk. The cafe latte served at 'little cloud coffee' uses a double shot of espresso.
When made by pour-over drip, this coffee will exhibit a balanced body with a soft sweetness and fragrance. Through use of a special roasting technique, this coffee will not turn unpleasantly sour after cooling, and can be enjoyed as iced coffee as well.
An original coffee dripper custom-made for little cloud coffee by a 150 year-old kutani-yaki pottery atelier. Each piece is individually shaped on a potter's wheel by experienced artisans, who utilize a specially made tool to painstakingly carve out the intricate inner grooves of the dripper. Like products in the visvim collection, the design for this coffee dripper is rooted first and foremost in its functionality.
There are two primary ways to brew coffee: steeping and filtration. Steeping entails immersing coffee grounds in hot water and can be seen in mechanisms like a french press machine, while filtration describes a method of passing hot water through a layer of grounds, which is seen in cone shaped coffee drippers like the one custom-made for little cloud coffee. If poured incorrectly, however, even coffee drippers can end up inadvertently immersing the coffee grounds. When hot water unnecessarily accumulates in the bottom of the dripper, the grounds are drowned and the resulting coffee exhibits an unpleasant mix of flavors.
The little cloud coffee dripper is constructed to avoid drowning the coffee grounds, and suppresses unpleasant flavors as much as possible through smooth water permeation, producing a balanced coffee extract.
